A Minimum of 30 Days of Dry Ageing

Every selected cut undergoes a minimum of 30 days of dry ageing, with some cuts aged longer depending on their size, structure and individual characteristics.

Responsible Use Beyond the Main Cut

Our commitment to respecting ingredients continues beyond the primary cut.

Where possible, bones and suitable trimmings are transformed into rich stocks, reductions and sauces, adding depth to our dishes while ensuring more of each ingredient is thoughtfully utilised.

Our dry-aged beef fat is also carefully rendered into a rich beef butter, used to enhance flavour and finish selected dishes.
